I used a photo as a base to get a colour palette, but its mostly using the colour picker in PS.

would you say that it pays off massively to practise block-ins, maybe only to a stage where you cant really recognize much?
to me, it seems you must be able to nail all the essentials with the block-in in around 10 minutes. some minutes left for fixing up around the focal point, clean up the one or other stray edge and that should be it.

correct, definately helps alot! PLus, if something isnt working you can just throw it away and try summin else without wasting too much time.
